Recipe: Mussels Diablo
A quick and easy take on shrimp diablo. Great with mussels from the Pacific or the Atlantic.
Ingredients
- 2 tablespoons Olive Oil
- 1 pound Mussels
- 1 teaspoon chopped Garlic
- 1 ounce White Wine
- 2 ounce Seafood Stock
- ½ cup Heavy Cream
- 3 Cherry Tomatoes, halved
- ½ ounce fresh squeezed Lemon Juice
- 1 teaspoon chopped Parsley
- 1 ounce Parmesan
- 1 teaspoon Red Chili Flakes
- Salt and Pepper, to taste
- 1 ounce Butter
Method
- Heat oil in skillet. Add mussels and cook until just starting to open.
- Add garlic, cook for 30 seconds.
- Deglaze with white wine.
- Add seafood stock and heavy cream. Reduce.
- Add tomatoes, lemon juice, parsley and parmesan cheese.
- Add salt and pepper to taste.
- Finish with butter.
- Serve over pasta.
